Grilled Ontario vegetables paired with prosciutto make this a hearty and delicious sandwich.
|10||slices Maple Leaf® Canadian CraftTM Prosciutto|
|1||small eggplant, sliced|
|1||large red pepper|
|1||small red onion, sliced|
|4||slices buffalo mozzarella cheese|
|4||slices rustic style bread|
|4||fresh basil leaves|
Preheat grill to medium high heat.
Roast eggplant, red pepper and onion for 4 to 5 minutes.
Remove skin from red pepper and slice into 1 inch strips.
Season vegetables with salt and pepper.
Assemble sandwiches by placing cheese on bottom slice of bread followed by 5 slices of prosciutto, eggplant, red pepper, red onion and basil.
Repeat with remaining ingredients.
Grill sandwiches 2 to 3 minutes per side.
Serve with a side salad of baby greens or pair with kettle chips.
