Zucchini Ribbon & Tomato Grilled Cheese Sandwich

About this Recipe

The ooey goey swiss cheese melts between the zucchini ribbons & tomato slices for that extra great taste.


2 slices Dempsters Whole Grain Multi-Grain bread
4 slices swiss cheese
4 slices beefsteak tomatoes
8 strips zucchini - thinly sliced
2 tsp Dijon mustard
2 tbsp butter
salt, pepper to taste


Preheat skillet, add 1/2 tbsp. butter & lightly saute the zucchini strips just till tender. Set aside to cool.

Reheat non-stick skllet on medium heat.
- Spread dijon mustard on the 2 inside slices of bread.
- Top bottom slices with 2 slices of swiss cheese & the 4 tomato slices. Salt & pepper to taste.
- Ribbon the zucchini slices & place over the tomato slices..
- Top with remaining 2 cheese slices.
- Place 2nd slice of bread on top and butter.

- Melt 1 tbsp. butter & add the sandwich. Grill on one side till browned, flip & grill other side till golden brown, 2 - 4 minutes.
