This quick and healthy snack or starter takes minutes to prepare! As a bonus, it's an easy way to get your kids to eat their vegetables!
|1||Green onion, finely chopped|
|2 tbsp||(30 mL) Grated Parmesan cheese|
|.5 tsp||(2 mL) Garlic powder|
|.5 tsp||(2 mL) Oregano|
|Salt and pepper to taste|
CUT each zucchini, lengthwise, into 3 equal strips. Place zucchini cut side up, in a single layer, in either a shallow microwave-safe or oven-safe dish. Sprinkle with green onion.
MIX cheese with garlic powder and oregano; sprinkle over zucchini. Season with salt and pepper.
TO MICROWAVE: cover with microwave-safe plastic wrap, venting one corner. Microwave on HIGH for 3 to 5 minutes or until zucchini is cooked.
TO BROIL: place oven-safe dish 6 to 8 inches (15 to 20 cm) under pre-heated broiler and broil for 5 to 6 minutes or until zucchini is cooked.
