1 cup (250 mL) Finely chopped fennel
2 cups (500 mL) Cooked and chopped shrimp (approx. 1 lb/454 g)
1/3 cup (80 mL) Mayonnaise
1 tbsp (15 mL) Chopped fresh tarragon
1 tbsp (15 mL) Dijon mustard
1 Lemon, zested and juiced
Salt and pepper
8 Slices Dempster’s® 100% Whole Grains Honey & Oatmeal Bread, lightly toasted
1 cup (250 mL) Shredded lettuce


MIX together fennel, shrimp, mayonnaise, tarragon, mustard, lemon zest and juice, salt and pepper.

ASSEMBLE sandwiches by dividing lettuce between four slices of toasted bread. Top each with ½ cup (125 mL) of shrimp mixture and remaining slices of toasted bread.
