Olivieri ® Whole Wheat Five Cheese Tortelloni tossed with roasted red peppers, freshly cooked shrimp and pine nuts. Smoother in a light Olivieri® Alfredo Sauce and sprinkle with Parmesan and basil to serve.
|600 g||Package OLIVIERI® NutriWise™Whole Wheat Five Cheese Tortelloni|
|15 ml||Olive oil|
|500 ml||Coarsely chopped baby spinach leaves|
|300 ml||Tub OLIVIERI® Alfredo Light Sauce|
|250 ml||Prepared roasted red peppers, diced|
|500 ml||Cooked medium shrimp|
|125 ml||Pine nuts|
|30 ml||Finely chopped basil leaves|
|125 ml||Shaved Parmesan cheese|
COOK pasta in a large pot of boiling salted water for 6-8 minutes. Meanwhile, heat olive oil in a large skillet over medium heat.
ADD baby spinach to skillet and cook for 1 minute or until wilted.
ADD Alfredo sauce, roasted red peppers and shrimp. Stir gently until heated through.
DRAIN pasta, add to skillet and combine.
SERVE topped with pine nuts, basil and Parmesan cheese.
