Super moist with delicate flavours, this whole roast chicken dish will become a family favourite.
|1||Maple Leaf Prime® Whole Chicken|
|1||bottle Woodbridge by Robert Mondavi Pinot Grigio|
|1/2 cup||olive oil|
|4||whole cloves garlic, crushed|
|1||small onion, quartered|
Preheat oven to 375 degrees
Stuff cavity of chicken with half the lemon and the onion. Divide herbs and place half in the cavity. Place chicken along with remaining lemon, herbs and garlic in a deep bowl. Pour wine and olive oil over top. Cover with plastic wrap and marinate in refrigerator for at least 8 hours or overnight.
Remove chicken from marinade and place in a roasting pan. Pour one cup of the marinade into the base of the pan. With your fingers gently loosen skin on the breast of the chicken. Insert one pad of butter on each side. Season with salt and pepper. Roast in over for 45 mins to an hour or until an internal temperature of 165 degrees is reached. For extra crispy skin broil chicken for last 5 minutes of cooking.
Serve with a side salad of spinach and romaine
