BBQ Season makes everything easy and simple. This light and juicy burger is a no fuss colourful dish that has hints of hot spice topped with cool refreshing tropical fruits and aromatic mint.
|1 lb||ground Maple Leaf chicken, turkey can be used|
|1/4 cup||minced onion|
|2 tbsp||chopped chives|
|1/2 tsp||-1 tsp salt|
|1 tbsp||chipotle spice|
|1/2 tbsp||black pepper|
|1/2||diced red tomato|
|1/2 cup||papaya, mango, green pepper, mint, diced|
|1/4 cup||red or yellow onion, finely diced|
|2 tbsp||white balsamic vinegar|
|1||birds eye pepper, finely chopped|
|1||pinch of salt|
|1/2 cup||bread crumbs|
In a medium sized bowl mix together, ground chicken, egg, onion, chives, salt and spices. When mixed add crumbs and blend, set aside to blend.
Divide the mixture into 4.
Shape into patties to desired size.
Cook or grill for 20 min turning after 10 min.
Serve with toasted buns.
Tropical Mint Salsa:: mix together the tomato, mango, papaya, mint, salt, hot pepper, onion, oil and vinegar. Serve as a side or as a topping.
Can be made up to 1 day ahead.
