Tastes like tomatoes and watermelon! A very refreshing apetizer


1 watermelon
4 Ripe Tomatoes
1 can diced tomatoes
5 tsp dried basil
1 yellow pepper
2 green onions
1/3 cup olive oil
1/4 cup sun-dried tomatoes in oil
2 tbsp white wine vinegar
1 cucumber


Chop and seed all vegetables and fruits. Mix olive oil, basil and vinegar and combine with the chopped ingredients and allow to marinate for 30 minutes. Blend in bathes or with an immersion blender until all smooth. Strain to remove excess chunks and seeds if desired. Chill and serve with soup crackers
