Warm Spinach and Bacon Salad

Ingredients

1 tbsp (15 mL) Vegetable oil
1 (8 oz/227 g) Container sliced white mushrooms
6 cups (1.5 L) Baby spinach
1 Pkg (85 g) Maple Leaf® Natural Selections® Bacon Pieces
1/2 cup (125 mL) Sliced red onion
1/4 cup (60 mL) Ready prepared balsamic vinaigrette
1/3 cup (80 mL) Crumbled Goat cheese

Directions

HEAT oil in a skillet over medium heat. Add mushrooms and sauté for 5 to 7 minutes, or until moisture has evaporated.

COMBINE spinach, bacon and red onion in a large serving bowl. Drizzle with dressing and top with mushrooms and crumbled cheese.

SERVE immediately.
