1 cup (60 mL) Light mayonnaise or light sour cream
1 tsp (5 mL) Lemon juice
1 1/2 tsp (7 mL) Dijon mustard
1 1/2 tsp (7 mL) Skim milk
2 Dempster’s® 100% Whole Wheat English Muffins, split and toasted
4 oz (100 g) Smoked salmon
1 cup (250 mL) Baby arugula
4 Eggs, poached
Pinch of smoked paprika
1 Green onion, diced


WHISK together mayonnaise or sour cream, lemon juice, mustard and skim milk. Set aside.

PLACE four English muffins halves on four plates. Top each with 1 oz (28 g) salmon, ¼ cup (60 mL) baby arugula, and a poached egg. Drizzle each with the mayonnaise mixture and sprinkle with smoked paprika. Garnish with green onion and serve.
