|550 ml||(1 pint) Grape tomatoes, quartered|
|1/4 cup||(60 mL) Finely chopped sweet onion|
|1/2 cup||(125 mL) Chopped fresh basil|
|1 tbsp||(15 mL) Balsamic vinegar|
|2 tbsp||(30 mL) Olive oil|
|6||Slices Villaggio® 100% Whole Wheat Thick Sliced Italian Style Bread|
|1/2 cup||(80 mL) Freshly grated Parmesan cheese|
|1||Clove garlic, minced|
COMBINE tomatoes, onion, garlic and basil in a medium bowl. Drizzle with balsamic vinegar and 2 tbsp (30 mL) olive oil. Set aside for 10-15 minutes to allow the flavours to blend.
PREHEAT broiler to high heat. Arrange slices of bread on a baking sheet. Lightly brush with olive oil. Place under broiler for 2-3 minutes per side until evenly toasted. Sprinkle each toast with Parmesan cheese and return to broiler for 1 minute or until cheese has melted. Top each slice of cheese toast with bruschetta mixture and serve immediately.
