|2/3 cup||Dry white beans|
|1||Bell pepper, diced|
|2||Cloves of garlic, minced|
|4 cups||Water or veggie stock|
|1/4 cup||Tomato paste|
|3 tbsp||Black bean sauce|
|6||Leaves or handfuls of lettuce|
1. In the morning, add all the ingredients except the black bean sauce, buns, and lettuce to the slow cooker. Stir to combine.
2. Turn the slow cooker on low and cook for about 7-9 hours.
3. Stir the black bean sauce into the slow cooker mixture and toast the buns.
4. Scoop generous spoons of the beans in the buns, top with lettuce, and enjoy!
