With superfoods like kale and avocado and supergrains bread, this uber healthy sandwich will keep you energized.
|8||slices Dempster's® Supergrains with Flax, Quinoa and Chia, No Fat, No Sugar Added, toasted|
|1||ripe avocado, peeled, pitted and coarsely mashed|
|1||apple, cored and sliced|
|3 cups||(750 mL) shredded and stemmed kale|
|2 tbsp||(30 mL) extra virgin olive oil|
|1 tbsp||(15 mL) apple cider vinegar|
|1 tsp||(5 mL) grainy mustard|
|1/2 tsp||(2 mL) honey|
|1/4 tsp||(1 mL) each salt and pepper|
Sandwich: Spread mashed avocado evenly among 4 bread slices. Top with apple slices and Kale Salad. Cap with remaining bread slice. Serve immediately.
Kale Salad: Toss and massage shredded kale with olive oil. Toss in apple cider vinegar, mustard, honey, salt and pepper.
