With superfoods like kale and avocado and supergrains bread, this uber healthy sandwich will keep you energized.


8 slices Dempster's® Supergrains with Flax, Quinoa and Chia, No Fat, No Sugar Added, toasted
1 ripe avocado, peeled, pitted and coarsely mashed
1 apple, cored and sliced
Kale Salad
3 cups (750 mL) shredded and stemmed kale
2 tbsp (30 mL) extra virgin olive oil
1 tbsp (15 mL) apple cider vinegar
1 tsp (5 mL) grainy mustard
1/2 tsp (2 mL) honey
1/4 tsp (1 mL) each salt and pepper


Sandwich: Spread mashed avocado evenly among 4 bread slices. Top with apple slices and Kale Salad. Cap with remaining bread slice. Serve immediately.

Kale Salad: Toss and massage shredded kale with olive oil. Toss in apple cider vinegar, mustard, honey, salt and pepper.
