About this Recipe

Mexican quesadillas are easy to make and kids absolutely love them! For some extra protein, try adding cooked chicken or ham.


75 ml Sweet red pepper, diced
75 ml Sweet green pepper, diced
2 Green onions, sliced
250 ml Canned kidney beans, drained and rinsed
75 ml Mild tomato salsa
4 DEMPSTER’S®/ POM® Original tortillas 10 inch
325 ml Mozzarella cheese, shredded


MIX peppers, onions, beans and salsa in a bowl. Spread ¼ of mixture on one half of each tortilla. SPRINKLE with cheese. FOLD each tortilla in half and place in a non-stick frying pan over medium-high heat. COOK each quesadilla on both sides until cheese melts and tortillas are lightly toasted, about 3 minutes per side. CUT into wedges and serve immediately.
