Mexican quesadillas are easy to make and kids absolutely love them! For some extra protein, try adding cooked chicken or ham.
|75 ml||Sweet red pepper, diced|
|75 ml||Sweet green pepper, diced|
|2||Green onions, sliced|
|250 ml||Canned kidney beans, drained and rinsed|
|75 ml||Mild tomato salsa|
|4||DEMPSTER’S®/ POM® Original tortillas 10 inch|
|325 ml||Mozzarella cheese, shredded|
MIX peppers, onions, beans and salsa in a bowl. Spread ¼ of mixture on one half of each tortilla. SPRINKLE with cheese. FOLD each tortilla in half and place in a non-stick frying pan over medium-high heat. COOK each quesadilla on both sides until cheese melts and tortillas are lightly toasted, about 3 minutes per side. CUT into wedges and serve immediately.
