About this Recipe

Awesome aroma fills your house and a heart when cooking this romantic dinner. It tastes like 5 star restaurant chicken.
( if you don't have fresh herbs, substitute a teaspoon of dried herb for each tablespoon of the fresh)


2 tbsp minced parsley
2 tbsp minced fresh basil
2 tbsp minced fresh oregano
2 tbsp minced fresh rosemary
1/2 tsp each salt and black pepper
2 tbsp lemon juice
1 whole fryer chicken (2-3 lbs)


In a small bowl stir together all the dry ingredients, and then add lemon juice to create paste.
Preheat oven to 375 F. Rinse, drain and pat dry the chicken. Truss the chicken (tie the legs together). Place chicken breast side up in a roasting pan. Rub surface of the chicken with the herb mixture. Roast for approximately 1 1/4 - 1 1/2 hrs , basting every 15 minutes. Let chicken stand 10 minutes before carving. Enjoy.
