Chimichurri is a staple of Uruguayan cuisine and there is always a jar present in every Uruguayan's kitchen. It is the perfect sauce for grilled meats, chicken and fish.
|1 bunch||finely chopped Flat Leaf Parsley|
|.50 cup||Dried Oregano|
|12||Cloves of finely chopped garlic|
|.25 cup||Apple Cider vinegar|
|.50 cup||Extra Virgin Olive Oil|
|1 tsp||Salt to taste|
|1 tsp||Chili Flakes - optional|
Finely chop parsley, garlic and add the dried oregano (and chili flakes if using)
Put everything in a mason jar and add the salt, vinegar and the oil.
Let it rest for at least 90 minutes before using.
Spread on meat, chicken, or sausage or use for dipping fresh crusty bread. Delizioso!
