So versatile! Use these patties in burgers, sandwiches, wraps, or on their own. Make smaller versions as an appetizer. Good cold or hot. Also a great way to sneak in some vegetables for the kids : )
|1 lb Maple Leaf Prime Naturally Etra Lean Ground Chicken|
|3 thick slices of stale crusty Italian or french bread, crusts removed|
|1/3 cup milk|
|1 medium - large zucchini, grated and squeezed|
|1/2 cup feta cheese pieces|
|1 tsp oregano|
|1 tsp salt|
|1 tsp garlic powder|
In a bowl, break up the stale crusty bread into small pieces. Cover with the milk and let sit for 10 minutes until milk is fully absorbed. Break down bread into smaller pieces once softened.
In another bowl, gently break up the ground chicken. Add the bread that was soaked in milk, the grated zucchini, feta cheese, salt, oregano, garlic powder, and egg. Mix well with your hands. Mixture will be moist, but it will firm up when cooked.
Heat up frying pan and form into desired shapes. Cook over medium high heat for approximately 25 minutes, turning frequently to ensure even cooking.
As I wrote above, the patties are very versatile. For this reason, they are also great for the freezer to pull out to use for a weeknight dinner. : )
