I love Ukrainian food so I made it into a breakfast sandwich!

Ingredients

1 egg
2 tbsp dry cottage cheese
1/2 tsp dill
1 tbsp sour cream
1/3 cup thinly sliced Kubassa (Ukrainian sausage)
1 tsp mustard
1/2 tsp horseradish
1 Dempster's 100 % whole wheat english muffin
1 slice tomato

Directions

1. Toast English muffin. Spray inside of a coffee mug with non stick cooking spray. Break egg into mug and add in dry cottage cheese and dill. Stir gently for a second and try not to break the yolk.

2. Put egg mixture into microwave for 30 – 40 seconds (with cover) or until egg is set. Gently loosen by running knife between inside of mug and egg.

3. Mix sour cream, horseradish and mustard together. Spread evenly on each side of the inside of the English muffin.

4. Top one side of the English muffin with sliced kubassa and top with cooked egg ,then slice of tomato. Top with other half of English muffin.

Serve warm!
