A perfect addition to your summery BBQ. This colourful pasta salad combines a tasty oil-based dijon dressing, fresh greens and succulent chicken.
|1 cup||chopped string beans|
|1 cup||chopped red pepper|
|1 cup||chopped orange pepper|
|1 cup||chopped cuccumber|
|1 cup||chopped broccoli|
|1 cup||cherry tomatos|
|3 cups||cooked pasta|
|2||Maple leaf prime portions dijon mustard and herb|
|3/4 cup||extra virgin olive oil|
|1/4 cup||white balsamic vinegar|
|1 tbsp||Dijon mustard|
|pepper to taste|
Cook 3 cups of pasta while chopping up your favourite veggies. Mix pasta, veggies and two portions of dijon mustard and herb marinated chicken.
In a separate bowl, mix olive oil, vinegar, dijon mustard and honey. Once mixed, add the dressing to the pasta and veggie mixture.
Pepper to taste.
This mixture also tastes great with quinoa. Try other mixes of vegetables and beans for variety.
