Golden and delicious paired with Smoked ham and Swiss stuffed chicken from Prime.

Ingredients

2 potatoes
4 tbsp sour cream
2 tbsp butter
2 tbsp real bacon bits
1/2 onion chopped and sauteed
1/2 cup cheddar cheese-grated
3 tbsp grated parmesan cheese
2 tbsp grated cheddar-for topping

Directions

Was 2 potatoes and bake at 325F for 45 min (might need a bit longer depending on the size of the potatoes).
Cut the potatoes in half and scoop out the centre into a bowl. Don't scoop too close to the edge-leave 1/4 inch or more.
In the bowl with the potatoes combine the rest of the ingredients (except for the cheddar for topping). stir together until well combined. Stuff the filling back into the potato shells and place them in a baking dish. Top with the rest of the cheddar and return to the oven to bake for 20 min at 400F.
