Freshly cooked spaghetti tossed with creamy pesto, fresh arugula and Tuscan sausage. Sprinkle with freshly grated parmesan to serve!


1 lb (500 g) Spaghetti
.25 cup (60 mL) Olive oil
1 Red onion, sliced
.5 tsp (2 mL) Chili flakes
.75 cup (175 mL) Roasted red peppers, sliced
1 Pkg chicken sausage - any flavour
.25 cup (60 mL) Ready prepared pesto
2 cups (500 mL) Arugula
Salt and pepper
.25 cup (60 mL) Freshly grated Parmesan cheese


COOK pasta according to package instructions.

HEAT oil in a large pan over medium heat, add onions and cook for 3-5 minutes. Add chili flakes, peppers and cooked sausage and cook for another 2 minutes. Stir in cooked pasta and pesto until hot, about 5 minutes. Stir in arugula, heat until wilted, season with salt and pepper. Garnish with Parmesan cheese and serve immediately.
