Freshly cooked spaghetti tossed with creamy pesto, fresh arugula and Tuscan sausage. Sprinkle with freshly grated parmesan to serve!
|1 lb||(500 g) Spaghetti|
|.25 cup||(60 mL) Olive oil|
|1||Red onion, sliced|
|.5 tsp||(2 mL) Chili flakes|
|.75 cup||(175 mL) Roasted red peppers, sliced|
|1 Pkg||chicken sausage - any flavour|
|.25 cup||(60 mL) Ready prepared pesto|
|2 cups||(500 mL) Arugula|
|Salt and pepper|
|.25 cup||(60 mL) Freshly grated Parmesan cheese|
COOK pasta according to package instructions.
HEAT oil in a large pan over medium heat, add onions and cook for 3-5 minutes. Add chili flakes, peppers and cooked sausage and cook for another 2 minutes. Stir in cooked pasta and pesto until hot, about 5 minutes. Stir in arugula, heat until wilted, season with salt and pepper. Garnish with Parmesan cheese and serve immediately.
