Tuscan flavours - white bean, sausage, roasted pepper and Provolone cheese topped with peppery arugula


2 Slices Bon Matin® Multigrain Bread , lightly toasted
2 tbsp (30 mL) Ready prepared white bean dip or spread (or hummus)
4 Slices summer sausage or salami
2 Slices Provolone cheese
1/2 Roasted red pepper, sliced
1/4 cup (60 mL) Baby arugula or watercress


SPREAD bean dip on one slice of toasted bread. Layer summer sausage, Provolone cheese, red pepper, and arugula. Sandwich and enjoy.


Make your own white bean dip by combining 2 cloves of garlic, 1 (19 oz/540 mL) can white beans, salt and pepper, the juice of a lemon, ½ tsp (2 mL) chopped rosemary or thyme and ¼ cup (60 mL) of olive oil. Pulse until smooth in the bowl of a food processor until smooth.
