Tuscan flavours - white bean, sausage, roasted pepper and Provolone cheese topped with peppery arugula
|2||Slices Bon Matin® Multigrain Bread , lightly toasted|
|2 tbsp||(30 mL) Ready prepared white bean dip or spread (or hummus)|
|4||Slices summer sausage or salami|
|2||Slices Provolone cheese|
|1/2||Roasted red pepper, sliced|
|1/4 cup||(60 mL) Baby arugula or watercress|
SPREAD bean dip on one slice of toasted bread. Layer summer sausage, Provolone cheese, red pepper, and arugula. Sandwich and enjoy.
Make your own white bean dip by combining 2 cloves of garlic, 1 (19 oz/540 mL) can white beans, salt and pepper, the juice of a lemon, ½ tsp (2 mL) chopped rosemary or thyme and ¼ cup (60 mL) of olive oil. Pulse until smooth in the bowl of a food processor until smooth.
