This dish is a perfect accompaniment to Maple Leaf PRIME Italiano Pizza Style Chicken Breasts!


2 tbsp extra virgin olive oil
2 cloves garlic, minced
.5 cup chopped red pepper
.5 cup chopped red onion
.5 cup sliced zucchini
1 1/2 cups evaporated milk
1/4 cup grated parmesan
1/2 cup halved grape tomatoes
1 cup fresh baby spinach
1/2 Pkg fresh linguini


In a large skillet, heat oil over medium heat. Add garlic and stir until fragrant (about 30 seconds). Add pepper, onion and zucchini, and cook until slightly softened . Meanwhile, bring a large pot of salted water to a boil and add linguini. Cook for about 4 minutes or as directed on package. Drain pasta and add to skillet. Add milk and cheese and toss to coat. Add spinach and tomatoes and simmer while stirring until spinach is wilted and sauce has slightly thickened. Serve immediately with additional grated parmesan and fresh basil.
