This quick and easy Taco makes a great lunch or dinner option.
|1 tbsp||(15 mL) Oil|
|1||Package Maple Leaf Prime Naturally® Extra Lean Ground Turkey|
|1 tbsp||(15 mL) Chili powder|
|.5 tsp||(2 mL) Each cumin, garlic powder and freshly ground black pepper|
|.5 cup||(125 mL) Drained and rinsed canned black beans|
|.5 cup||(125 mL) Cooked white rice|
|.25 cup||(60 mL) Frozen corn niblets, thawed|
|1||Green onion, sliced|
|1||Package Dempster’s® Corn Tortillas, warmed|
|1 cup||(250 mL) Shredded Cheddar cheese|
|1||Small tomato, diced|
HEAT oil in skillet over medium high-heat. Cook turkey with chili powder, cumin, garlic powder, pepper and jalapeno, breaking up the turkey with the back of a spoon, until meat is no longer pink.
STIR in black beans, rice, corn, cilantro and green onion until well combined and heated through.
DIVIDE turkey mixture evenly between tortillas. Top with shredded cheese and tomatoes. Fold in half to serve.
Tips: Decrease amount of chili powder and remove jalapeno pepper to make this more kid friendly.
Serving Suggestions: Serve toppings of salsa and sour cream on the side.
