About this Recipe

Delicious deep-fried croquettes stuffed with minced turkey, white rice and creamy mayonnaise. Roll in breadcrumbs and fry until golden brown!

Ingredients

1 tbsp (15 mL) Butter
1 tbsp (15 mL) Olive oil
1 lb (454 g) Maple Leaf® Prime® Naturally Extra Lean Ground Turkey
1 Rib celery, finely chopped
1 tsp (5 mL) Poultry seasoning
Pinch cayenne pepper
Salt and pepper
.66 cup (150 mL) Mayonnaise
1 Egg, beaten
1 Green onion, finely chopped
2 cups (500 mL) Cooked white rice
.75 cup (175 mL) Seasoned breadcrumbs
2 cups or 3 (500-750 mL) Vegetable oil, for frying
Cranberry sauce

Directions

HEAT butter and olive oil in a large skillet over medium –high heat. Add turkey and cook, breaking up with a wooden spoon for 7-8 minutes. Add celery, poultry seasoning, cayenne pepper, salt and pepper and continue to cook for 2-3 minutes or until evenly browned. Remove from the heat and set aside.

MIX mayonnaise, egg, green onion and rice together in a large bowl. Add turkey mixture and stir to combine. Cover and chill for at least 1 hour.

SHAPE croquettes by placing a ¼ cup (60 mL) of the mixture in the palm of your hand and shaping into a 3” (7.5 cm) log. Place breadcrumbs in a shallow bowl and dredge each log in the crumbs.

HEAT oil into a large skillet set over medium-high heat. The oil should reach about 1” (2.5 cm) up the inside of the skillet. Fry croquettes in hot oil until golden brown, about 2-3 minutes per side.

SERVE with cranberry sauce.
