Low fat Turkey is a great protein for your New Years Resolution of getting back into shape and eating healthier!
This dish is a complete meal with colourful veggies, protein and super food quinoa as a carb.
A great lunch or quick dinner meal made in minutes.

Ingredients

1 pkg. boneless Turkey Breast Stir Fry, Maple Leaf Prime
1/2 each red and orange pepper, seeded chopped or sliced
1 leek, white part only, washed, chopped
1/2 eggplant, peel on, diced
1 garlic clove, minced
3 tbsp extra virgin olive oil
4 cups cooked quinoa
1 tsp each salt and pepper
1 hot pepper, cut into coins
1/4 cup parsley

Directions

In a large skillet sauté garlic and leeks in oil for 1 min. Add turkey and sear on 2 sides.
Remove to a platter.
Tip in remaining vegetables, stirring to cook until softened on med. high heat for 5-8 min.
Return the turkey back into the mixture, add seasonings and stir to mix. Continue cooking another minute or so until no pink shows when you cut into the Turkey.
Stir in the cooked quinoa, taste for seasonings and adjust.
Sprinkle with parsley.
*Chicken can be substituted.*
*Hot pepper can be adjusted to your tastes.*
