A hearty lunch or a snack for the family, this recipe makes excellent use of leftover turkey!
|2||small whole wheat tortillas|
|1/2 cup||grated old cheddar cheese|
|2 tbsp||finely chopped red onions|
|2 tbsp||sour cream|
|1 cup||chopped, de-boned, leftover turkey|
|non-stick cooking spray|
Spray a medium frying pan with non-stick cooking spray.
Heat to medium-high.
On a plate, prepare quesadillas as follows:
Lay each wrap flat. Cover half of the wrap in 2tbsp of cheese, followed by 1 tbsp. of onions and 1/2 cup of turkey, then another 2 tbsp. of cheese.
Fold the wrap in half, and transfer to pan.
Cook for 6-8 minutes per side (total of 12-16min), depending on how crunchy you like your shells.
Serve with salsa and sour cream.
