The crispy Dempster's tortilla makes a nice shell to hold the melted cheese and turkey filling inside this tasty turkey quesadilla.
|1||Dempster's Ancient Grains tortilla|
|2||slices of Oka cheese, cut into pieces|
|1/4 cup||cooked turkey meat, cubed|
|8||orange cherry tomatoes, halved|
|2 tbsp||red onion, finely diced|
|1 tbsp||green onion, chopped|
|1 tsp||cilantro, chopped|
Place tortilla flat in a non-stick frying pan. Turn heat on medium high. Place cheese, turkey, red onion, tomatoes, green onion, and cilantro on half of the tortilla only. Gently fold over and place in the middle of frying pan. Cover with lid and cook for about 3 minutes on low heat until browned on bottom. Gently flip over and cook covered for another 3 minutes until browned on bottom and the chees has melted. Cut into 4 wedges and enjoy while still hot.
