Left overs can make a great simple soup!
|1||deboned turkey - keep the bones|
|1||handful of turkey trimmings|
|1 cup||chopped onion|
|1 cup||chopped carrots|
|1 cup||curly noodles|
|1 cup||chopped celery|
After your turkey has had all the meat removed, break as many bones as possible. Place in a large pot with water, and bring to boil, then lower heat so it is just boiling. Cook for 4 hours, adding water to keep it from drying out. Boil gently until juice is halved. Remove bones and filter out juices, with a fine sieve. Add your noodles, celery, carrots and onions. Cook until tender. Remove from heat. Take slices of turkey trimmings and heat them up then add broth to a bowl and top with turkey trimmings. Very healthy turkey soup!
