This casserole is a great way to use up thanksgiving leftovers.
|2 cups||instant rice, cooked|
|2 cups||Maple Leaf Prime Turkey Breast, cooked and diced|
|1 can||cream of chicken soup|
|1 cup||chicken stock|
|4 tbsp||Dijon mustard|
|2 cups||frozen mixed vegetables|
|Salt and pepper|
|4 cups||stuffing, prepared|
|2 cups||cheddar cheese, grated|
Preheat oven to 375 degrees.
Spray an 8 x 11 casserole dish with cooking oil. In a large bowl combine first 7 items and stir well to combine. Pour into casserole dish. Top with prepared stuffing. Bake in oven for 25 minutes. Sprinkle cheese over top and bake for 5 more minutes or until cheese is melted and bubbly.
Serve with a side salad
