Turkey and Spinach Lasagne

This is a quick and delicious lasagne that every kid will love for lunch and dinner. An old classic that works!

Ingredients

1 Pkg Maple Leaf Prime Naturally Extra Lean Ground Turkey
9 lasagna noodles
1.5 640 ml jars of spaghetti sauce
175 g ricotta cheese
125 g grated Parmesan cheese
350 g shredded mozzarella cheese
1 medium onion
2 cups spinach

Directions

Preheat oven to 350ºF. Cook noodles according to package directions. Dice onion. Finely chop spinach. Cook ground turkey and onion for 14 minutes or until fully cooked. Add a jar of spaghetti sauce and simmer uncovered for 5 minutes. Combine ricotta cheese, spinach and ¼ cup Parmesan cheese and mix well.

Spoon 3/4 cup mixture over a 13 x 9-inch baking dish. Layer 3 cooked noodles over mixture. Sprinkle with 1/2 cup mozzarella cheese; top with 1 cup mixture. Repeat with layering mixture twice. Cover with foil and bake for 45 minutes. Uncover and continue baking 8 minutes or until bubbly. Heat ½ jar of spaghetti sauce and divide among 6 plates before plating each piece of lasagne. This lasagne works well in a thermos too. Serves 6. Enjoy!
