This fresh summer salad is topped with Maple Leaf Prime® Fully Cooked Turkey Breast Slices, chopped mint and drizzled with a light homemade honey dressing.


75 ml Frozen peas
5 ml Lime zest
15 ml Lime juice
10 ml Honey
30 ml Vegetable or canola oil
Salt and pepper
1 L Torn Boston lettuce leaves
500 ml Spring mix salad greens
0.5 Red pepper, thinly sliced
150 g Package MAPLE LEAF PRIME® Fully Cooked and Sliced Turkey Breast
Chopped fresh mint


THAW frozen peas in a bowl with lukewarm water for 5 minutes. Drain and set aside. COMBINE lime zest, juice and honey in a small bowl. Slowly drizzle in oil while whisking mixture to combine. Season with salt and pepper; set aside. TOSS lettuce, red pepper, peas and dressing in a large bowl. Divide between 2 plates and top with turkey and mint. Serve immediately.
