This fresh summer salad is topped with Maple Leaf Prime® Fully Cooked Turkey Breast Slices, chopped mint and drizzled with a light homemade honey dressing.
|75 ml||Frozen peas|
|5 ml||Lime zest|
|15 ml||Lime juice|
|30 ml||Vegetable or canola oil|
|Salt and pepper|
|1 L||Torn Boston lettuce leaves|
|500 ml||Spring mix salad greens|
|0.5||Red pepper, thinly sliced|
|150 g||Package MAPLE LEAF PRIME® Fully Cooked and Sliced Turkey Breast|
|Chopped fresh mint|
THAW frozen peas in a bowl with lukewarm water for 5 minutes. Drain and set aside. COMBINE lime zest, juice and honey in a small bowl. Slowly drizzle in oil while whisking mixture to combine. Season with salt and pepper; set aside. TOSS lettuce, red pepper, peas and dressing in a large bowl. Divide between 2 plates and top with turkey and mint. Serve immediately.
