Try a different twist on stir-fry night. Lean strips of Prime turkey tossed together with fragrant leeks and peppers.


1 Package Maple Leaf Prime® Turkey Scaloppini or Maple Leaf Prime® Turkey Breast
Salt and pepper
3 tbsp (45 mL) Vegetable oil, divided
2 Red peppers, sliced
2 Cloves garlic, minced
2 Leeks, white parts only, sliced into rings
2 tsp (10 mL) Grated fresh ginger
1/3 cup (80 mL) Chicken broth or water
1/3 cup (80 mL) Soy sauce
1 tsp (5 mL) Sugar
1 tsp (5 mL) Sesame oil
1 tsp (5 mL) Chili garlic sauce
1 cup (250 mL) Bean sprouts
1 tbsp (15 mL) Cornstarch
2 tbsp (30 mL) Water
2 tbsp (30 mL) Chopped fresh cilantro


CUT turkey into ½” (1 cm) wide strips. Season with salt and pepper. Heat 1 tbsp (15 mL) vegetable oil in a large skillet or wok over high heat. Stir-fry turkey for 7-8 minutes or until golden brown in colour and internal temperature reaches 165°F (74°C). Remove from pan and set aside. HEAT remaining oil in the same pan. Add peppers, garlic and leeks. Stir-fry 3-4 minutes. Add ginger, broth, soy sauce, sugar, sesame oil, chili garlic sauce, turkey and bean sprouts. Cook 1 to 2 minutes. MIX together cornstarch and water in a small bowl. Add to pan and cook 1 more minute to thicken sauce. Serve hot garnished with cilantro.
