A classic Italian pasta sauce using pantry staples converted into a relish to top these juicy tangy turkey burgers.
|2||Packages (approximately 800 g) Maple Leaf Prime® Extra Lean minced Turkey|
|1 cup||(250 mL) Crumbled Feta cheese|
|1 tbsp||(15 mL) Chopped fresh oregano|
|1 tbsp||(15 mL) Lemon zest|
|Salt and pepper to taste|
|Arugula for garnish|
|1||Red tomato, seeded, diced|
|1||Yellow tomato, seeded, diced|
|.25 cup||(60 mL) Diced red onion|
|2 tbsp||(30 mL) Capers|
|1 tbsp||(15 mL) Chopped fresh chives|
|1 tbsp||(15 mL) Lemon juice|
|1||Clove garlic, minced|
|2 tbsp||(30 mL) Chopped Kalamata olives|
|Salt and Pepper|
COMBINE turkey, Feta, oregano, lemon zest, salt and pepper in a bowl. Gently mix together and shape into 6 patties.
MIX together all ingredients for the relish in a small bowl and set aside.
PREHEAT BBQ to medium-high. Lightly coat the grill with non-stick cooking spray. Grill patties 5 to 7 minutes per side or until internal temperature reaches 165°F (74°C).
TOAST buns, cut side down, on the grill until lightly browned. Top burgers with Puttanesca relish and arugula before serving.
