This is a really quick and delicious gourmet sandwich. Sweet and savoury, with turkey, fig jam, brie cheese, a tangy garlic aioli and apple pie apples , it hits all the right taste buds. If you love apple pie, brie cheese and turkey- this is the sandwich for you!


2 Dempster's apple pie bagels
75 g brie cheese
1 bunch baby spinach, washed and dried
100 g left-over oven roasted turkey
1 granny smith apple, peeled and cored
1 tsp cinnamon
2 tsp sugar
4 tsp fig jam/spread
2 tsp mayonnaise
1/2 tsp pureed garlic (I use jarred)


1. Lightly toast bagel in toaster. Slice up apple and toss to coat with sugar and cinnamon. Cover apple mixture and cook in a microwave safe bowl for 1 minute in microwave. Drain off excess fluid.
2. Mix mayonnaise and minced garlic together.
3. Cut bagels half and add garlic mayo, a few spinach leaves, turkey and brie cheese to the bottom half (dividing ingredients in 2 for each bagel.) Microwave for about 30 – 45 seconds or until brie is melted. Add cooked apple slices (dividing ingredients between both bagels).
4.On the top half the bagels, liberally spread fig jam, dividing equally between both, and place on top of bottom half of bagels
5. Serve and enjoy!
