I love combining sweet and savoury! The pears and caramelized onions are sweet, and the turkey and brie savoury!


1 spanish onion, coarsly chopped
1 tbsp salted butter
1 tbsp olive oil
1 large bartlett pear
4 oz brie cheese
1 cup sliced leftover turkey breast
8 slices Dempster's bread


In a medium frying pan, heat oil and butter over medium-high heat.
Add onion, and fry for approximately 10 minutes of until the onion begin to caramelize.
Preheat oven to 375.
Wash and slice the pear into thin slices (approx. 5mm).
Lay all 8 slices of bread onto an ungreased cookie sheet.
Top four slices of bread with the following:
-1/4 cup of turkey
-1 slice of pear (covering 75% of the turkey)
-1oz brie
-1/4 of the caramelized onions
Bake for 10 minutes. Brie should be melted and pear should be soft. As this bakes, the plain slices of bread will toast up perfectly.
Top each of the turkey/brie/pear/onion slices of bread with a plain slice of bread for a delicious warm turkey sandwich!
