I used vegetables that I had grilled the day before on the bbq, but you could also roast the pepper and zucchini in the oven. Walnuts go great with the turkey and feta.
|3 slices Maple Leaf Naturals sliced Turkey|
|1 large tortilla|
|one half of grilled red pepper|
|2 strips grilled zucchinni|
|1 tsps crumbled feta cheese|
|1 handful of fresh arugula|
|1 tbsp of chopped walnuts|
|drizzle of olive oil|
|salt and pepper to taste|
Layer the ingredients in the middle of the tortilla, leaving room at either side. (Turkey, red pepper, zucchini, feta, arugula, walnuts.) Drizzle with olive oil and salt and pepper to taste. Fold in at both sides and then roll. Cut in half and serve!
***Prep time will vary depending on whether you have roasted or grilled vegetables handy. The total time below assumes that this step has already been completed.
