This fresh and tasty salad is sweet, spicy, and a promising hit at any potluck!


1 (500 g) Package frozen, shelled edamame beans
1 cup (250 mL) Orzo pasta
1 (400 g) Package Maple Leaf Prime Naturally® Oven Roasted Turkey Breast Slices or diced turkey leftov
4 Green onions, sliced
2 Red peppers, diced
2 Shallots, sliced
¼ cup (60 mL) Toasted slivered almonds
1/4 cup (60 mL) Chopped fresh cilantro
¼ cup (60 mL) Vegetable oil
1 tbsp (15 mL) Sesame oil
1 tsp (5 mL) Minced garlic
2 tsp (10 mL) Freshly grated ginger root
¼ cup (60 mL) Rice vinegar
1 tbsp (15 mL) Lime juice
¼ cup (60 mL) Soy sauce
2 tbsp (30 mL) Hoisin sauce


BRING a large pot of water to a boil. Add edamame beans and cook 2-3 minutes. Drain, rinse under cold water and set aside.

COOK orzo as per package instructions, drain, and rinse under cold water.et aside.

COMBINE edamame, orzo, chicken, green onions, peppers and shallots in a large bowl. In a separate bowl combine dressing ingredients and whisk together. Pour dressing over turkey mixture and toss. Top with toasted almonds and cilantro. Serve chilled.
