This is one of the tastiest ways that I have enjoyed leftover turkey, and can be prepared as a snack or an appetizer.
|1.5 cups||white flour|
|1/3 cup||cold water|
|2/3 cup||salted butter|
|1 cup||finely diced leftover turkey|
|4||strips of pre-cooked bacon, chopped|
In a bowl, mix butter and flour until the mixture is crumbly. Slowly add water and continue to mix. Form into a ball, and refrigerate for at least 4 hours.
Preheat oven to 375.
Roll out dough until it is only about 3-4mm thick.
Using a water glass, cut perfect circles. Remove circles, and set on an ungreased baking sheet.
Re-roll the discarded and un-used pieces of dough to another 3-4mm flat. Again, cut circles using a water glass. You should have about 8-12 large circles.
Fill the centre of each circle with an even amount of turkey (about 1.5tbsp), followed by a pinch of bacon, and a small slice of brie.
Carefully pull up the edges of the circles from each side, pinching together along the top. Leave the flat side down on the cookie sheet.
Bake for 12 minutes or until golden brown.
If you are short on time, this would work with a pre-made uncooked pie crust as well.
