This easy to make and fresh tasting sandwich is filled with nutritious fruits and vegetables, making it a great choice for lunch.


8 Slices Dempster’s® Healthy Way® Boost My Protein!
1 Hard boiled egg
1 (170 g) Can solid white tuna in water, drained
.25 cup (60 mL) Diced celery
.25 cup (60 mL) Diced dried mango
2 tbsp (30 mL) Minced green onions
3 tbsp (45 mL) Reduced fat olive oil mayonnaise
1 tsp (5 mL) Dijon mustard
1 (8 oz) Can unsweetened pineapple tidbits, drained
4 Lettuce leaves
2 Tomatoes, sliced
Salt and pepper


SLICE egg in half and remove the yolk. Reserve the yolk for another use. Dice egg white halves and place in a medium-mixing bowl. Gently flake the drained tuna and add to the egg along with celery, mango, green onions, mayonnaise, mustard and pineapple. Fold ingredients to combine.

ASSEMBLE sandwich by placing a lettuce leaf on each of four slices of bread, top with a generous scoop of the tuna mixture, two slices of tomato, salt and pepper and the second slice of bread.
