great way to use up some left overs


200 g chilled roast chicken
1/4 green pepper
1/4 red pepper
1/4 white onion
2 tbsp dijon mustard
salt and pepper
4 slices of Dempster's WholeGrains bread


1. Roughly chop the cold roast chicken.
2. Slice red pepper, onion, and green pepper into thin strips and soak in ice water for 10 mins. Drain and pat dry.
3. Wash lettuce and pat dry as well.
4 .Spread 1 tbsp of dijon mustard on a slice of bread and top with a leaf of lettuce. and half the shredded chicken. Layer some red pepper and green peppers and onions on top of the chicken and season with salt and pepper. Repeat for second sandwich. Enjoy!
