About this Recipe

6 Dempsters’s® Soft Corn Tortillas
1 lb (454 g) Ground beef or ground turkey
1 Pkg (30-35 g) Taco seasoning
4 cups (1 L) Shredded lettuce
1 cup (250 mL) Chopped tomatoes
1/2 Yellow pepper, diced
1/2 Small sweet onion, diced
1 cup (250 mL) Grated Cheddar cheese
1 cup (250 mL) Russian or Catalina dressing

PREHEAT oven to 425°F (220°C). Invert six 3” (7.5 cm) ramekins on a baking tray. Spray both sides of each tortilla with non-stick cooking spray. Place tortillas over the ramekins and bake in preheated oven for 8-10 minutes or until golden brown and crisp. Tortillas will drape over ramekins and form cups as they bake. Remove from oven and cool.

HEAT a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking up with the back of a wooden spoon, for 8-10 minutes or until golden brown. Sprinkle in taco seasoning and cook for about 1 minute longer. Remove from heat and set aside.

ASSEMBLE individual salads by placing taco bowls on dinner plates. Divide lettuce, seasoned meat, tomatoes, peppers, onions and cheese between the bowls. Drizzle with salad dressing and serve.
