2 tbsp (30 mL) Olive oil
1 Onion chopped
3 Cloves garlic, minced
1/2 Yellow pepper, chopped
1 Carrot, chopped
1 cup (250 mL) Sliced mushrooms
1 Pkg (175 g) Maple Leaf® Natural Selections® Pepperoni Slices
1 (28 oz) Can diced tomatoes
1/2 tsp (2 mL) Italian seasoning
6 cups (1.5 L) Chicken or vegetable broth
1 Pkg (350 g) Olivieri® Rainbow Tortellini
1/2 cup (125 mL) Sliced black olives
Salt and pepper
4 tbsp (60 mL) Freshly grated Parmesan cheese
2 tbsp (30 mL) Chopped fresh parsley


HEAT oil in a large pot over medium. Add onion, garlic, yellow pepper and carrot. Cook for 3-5 minutes or until tender. Add mushrooms and pepperoni; cook stirring for 1-2 minutes. Add Italian seasoning, tomatoes and broth. Bring to a boil then reduce heat and simmer for 10-15 minutes. Add tortellini and olives and simmer for another 10-12 minutes.

LADLE the hot soup into serving bowls and sprinkle with parmesan cheese and garnish with fresh parsley if using.
