Taking my favourite tomato sandwich outdoors. The sweet tomato sandwich and tangy bean salad provide a tasty combination your family will enjoy.
|8||Slices Dempster's® WholeGrains bread|
|2||Ripe, Beefsteak Tomatoes|
|1/2 tsp||Salt and Pepper|
|1 can||Dark red kidney beans, drained|
|1 can||Cut green beans, drained|
|1 can||Cut golden wax beans, drained|
|1/2 cup||Chopped red bell pepper|
|3 tbsp||Minced red onion|
|1/2 cup||Vegetable oil|
|4 tbsp||White wine vinegar|
|1 tbsp||Dijon mustard|
|2 tbsp||Greek seasoning|
|1||Onion, thinly sliced (optional)|
Prepare Bean Salad for Picnic:
In a medium bowl, combine first 5 ingredients.
In a small bowl, whisk together oil, vinegar, mustard, and Greek seasoning. Pour over bean mixture; cover and chill 4 hours, stirring occasionally.
Prepare Toasted Tomato Sandwiches:
Toast the Dempster's® WholeGrains bread to your liking. Let it cool for a bit while you core and cut the tomato into 1/8-inch slices.
Slather one side of each piece of toast with about a teaspoon and a half of mayonnaise and layer as many of the tomato slices as you can on top of one one piece of toast.
Sprinkle generously with salt and pepper. Top with the other piece of toast, cut in half diagonally.
Serve as soon as possible, or, if prepared hours in advance of a picnic, slice and wrap tomatoes separately, to be served with the toasted bread at the picnic
