Ingredients

5000 g cherry tomatoes
200 g shallots, brunoised
150 g celery, brunoised
250 g cucumber, brunoised
100 g poblano, brunoised
4 tbsp red wine vinegar

Directions

Macerate brunoised shallot in vinegar

Split heirloom tamoatoes; toss with salt and macerate for 15 minutes

Grind tomatoes further

Stir in remaining ingredients; adjust seasoning.

Add buffalo mozarella for fun...
