After a summer that was absolutely FILLED with tomatoes, I was running out of ideas on how to creatively incorporate them onto my family's plate so they didn't go to waste.


1 Pkg Tenderflake Patty Shells
.5 cup ricotta
1 egg
2 tsp herb blend seasoning of your choice
1 medium ripe tomato, sliced into 6 slices


Preheat oven to 400 F
Combine ricotta, egg, and herb seasoning in a small bowl
Lay out the patty shells on a parchment lined cookie sheet
Evenly divide the ricotta mixture between the shells
Top with a slice of tomato
Bake until golden, approximately 35-40 min
