Perfect for those hot summer days when you don’t want to be inside. Great, delicious, fresh flavours with crusty, Villaggio® Garlic Bread.
|1/2||loaf Villaggio® Toaster Garlic Bread|
|3 tbsp||(45 mL) Olive oil|
|1 cup||(250 mL) Grape tomatoes, halved|
|1/2||English cucumber, roughly chopped|
|1/2||Red or sweet onion, chopped|
|Fresh basil leaves|
|1||Chicken breast, cooked and chopped|
|1/2 cup||(125 mL) Shaved Parmesan cheese|
1 tsp (5 mL) Dijon mustard
1 tsp (5 mL) Honey
1 Clove garlic, minced
¼ cup (60 mL) White balsamic vinegar
½ cup (125 mL) Olive oil
WORKING in batches, prepared bread as per package directions. Cut into 1”(2.5 cm) cubes and place in a large bowl with the remaining salad ingredients. Reserve Parmesan cheese.
WHISK together all of the ingredients for the vinaigrette in a small bowl and drizzle over the salad. Let stand for 15-20 minutes, sprinkle with Parmesan cheese and serve.
Use chopped tomatoes in place of halved grape tomatoes.
