A delicious twist on an old favourite. My family loves toasted westerns as a quick go-to dinner in a hurry. Why not make them in a wrap for a fun twist.
|2||Dempsters dinner sized tortillas|
|1/4||red pepped diced|
|1/2 cup||shredded cheddar|
Saute onion and pepper in a skillet until onions start to turn clear. In a separate skillet fry bacon to desired crispness, and drain on a papper towel. Whisk eggs and water with a fork, add to skillet with the vegetables. Cook on medium heat, turning with a spatula until eggs are no longer runny. Spoon 1/2 of eggs onto each tortilla and top with the bacon and tomatoes. Fold over to close and toast in the toaster oven until browned on edges.
Serve with your favourite BBQ or Southwest sauce for dipping.
