This breakfast sandwich is a great way to enjoy a hot sandwich with leftover turkey!


2 slices of Dempster's Bread
2 large eggs
1 tbsp salted butter
2 tbsp diced bell peppers (any colour!)
2 tbsp diced red onion
1/4 cup shredded old cheddar cheese
1/4 cup finely chopped leftover turkey


In a small frying pan, melt butter over medium-high heat. Add onions and peppers. Fry for 5 minutes, stirring frequently. Add turkey, and fry for another 3 minutes. Add two raw eggs. Stir until egg whites and yolks are well mixed. Using a spatula, go around the edges of the pan to make sure that the egg isn't sticking, and stir the centre of the egg mixture to ensure well cooked. Cook for 8 minutes, flipping once.
During the last 2 minutes of cooking, put toast in toaster. Add cheese on top of egg and turkey mixture and allow to melt.
Put the eggs on top of one slice of toast, cheese facing up. Top with second piece of toast. Enjoy warm!
