This is a quick, light and tasty way to enjoy French toast on the go!
|3/4 cup||sliced strawberries|
|3/4 cup||cholesterol and fat free liquid egg replacement (I use Egg Creations)|
|4||Dempster's cinnamon and raisin english muffins|
|1 1/2 tbsp||maple syrup (no sugar added)|
|1 cup||non fat vanilla greek yogurt|
|8||slices of lean/lowfat maple or honey ham deli meat|
|4||whole strawberries - garnish|
|1 tbsp||powdered sugar - sprinkling garnish|
1. Spray 2 frying pans with non- stick cooking spray and turn element on medium high.
2. Mix cinnamon into liquid egg replacement and dip each half of the English muffins in mixture . Heat in frying pan on medium high for a couple of minutes or until lightly browned on one side, then turn english muffin halves and repeat. Heat the ham until lightly browned at the same time.
3.Meanwhile, mix the maple syrup into the non-fat vanilla greek yogurt.
4. Dividing ingredients by 4 english muffins, top bottom half of English muffins with ham , then top with sliced strawberries, then maple vanilla greek yogurt. Top with other half of English muffin .
5.Garnish top with a strawberry halved on toothpick and sprinkle with powdered sugar.
Serve immediately and enjoy!
